People expect this so there is evidence of the purchase? Apple cannot physically give you a receipt as they would in a store so they e-mail you a receipt

You can’t. A receipt is a written acknowledgment that a specified article or sum of money has been received as an exchange for goods or services. Receipts act as the title to property obtained in the exchange. They are the only proof of purchase you have. Without it, you could get in a lot of trouble. You could be accused of stealing. Receipts are also a legal document. For any purchase you make, you have to get a receipt. It’s the law. If you don’t want the receipts, just delete them. Apple is required by law to give you a copy of your receipt. Just like a store or restaurant. So, if I were you, I’d keep those receipts. You’ll need them if anything goes wrong with the items you purchased. Trust me, you won’t regret keeping them.
